An oven roasted chicken recipe!
This is one I used a couple of years ago when I roasted my first whole chicken. It's juicy and delicious!
Ingredients:
- a whole chicken (small is fine), room temperature
- 10 cloves of garlic
- 2 lemons
- thyme
- olive oil
- seasonings, to taste
Instructions:
- Preheat the oven to 300 degrees F.
- Peel and crush the garlic. Cut the lemons into wedges so that you have one half-a-lemon slice and several smaller wedges.
- Put the garlic, thyme, and smaller lemon wedges inside the chicken. Add the half-a-lemon piece last, cut side first, so that it blocks the others from falling out.
- Place the chicken in an oven safe pan and tuck the wings and thighs tightly against the sides. Brush the bird with olive oil and rub your chosen seasonings into the skin.
- Roast in the oven for 2 hours or until the inside temperature is 170 degrees F.
- Serve with side dishes of choice, or just butter or mayonnaise, and enjoy!
