To take a break from all the personal development posts I've published recently, let's talk about food. After all, I haven't talked about food at all lately. I should, though. Because food is delicious.
As a meat-based eater, I love everything meat-based. I eat plenty of eggs every day, and I make my famous beef chunk roast regularly. Right now, though (and I mean right this second, as I'm hungry and about to eat in a short while), I'm craving ground beef based dishes, like burgers and meatballs and beef filled tortillas. Here are some recipes that are calling my name right now:
- Sheet pan burgers by Mellissa at I Breathe I'm Hungry. I never realized that you can utilize the fat that escapes the burgers by placing onions and jalapenos on the tray in the oven, and this hack truly changes the way I look at things!
- Hasselback chicken by the same author. Chicken breast is usually a tad too dry for my taste, but the cheese in the pictures in the recipe make it look moist enough. (Too bad I'm avoiding cheese right now.)
- Bacon cheeseburger meatballs by the same author. There's just something about that beef and bacon and mayo combo that gets me.
- Grain free tortillas by Paola at Gnom-Gnom. Ahhh, I could fill them up with ground beef and guacamole and jalapenos and pico de gallo and sour cream...
Also, what could be better than a cheesy frittata? Or rotisserie chicken thighs with ranch mayo? Or a simple beef casserole with tomato sauce and a ton of different cheeses on top?
Oh, well. At least I have some leftover beef chunk roast from yesterday.
